Curd cheese patties

This recipe was inspired by my friend Nina Moon who introduced me to this Latvian delicacy. These patties are very quick and simple to make. And they make a delicious breakfast or supper as they’re not overly sweet.

You will need some curd cheese to make the patties. I have used Polish twaróg. You can find it on the dairy aisle in large supermarkets that sell Polish food or in Polish food shops.

250 g twaróg
1 large egg*
150 g Doves Farm gluten-free plain white flour (120 g for mixing with the dough + 30 g for coating the patties)
40 g Sweet Freedom
a pinch of salt
unsalted butter/non-dairy vegetable margarine/oil for frying

1. Put the twaróg, egg, 120 g of flour, Sweet Freedom and salt into a bowl and mix thoroughly into a dough.

2. Place 30 g of the flour on a plate.

3. To form the patties, take a heaped tablespoonful of the dough and roll it in the flour. Then shape it into a round patty and coat once more in the flour. Make the rest of the patties in the same way.

4. Heat a large frying pan on a high heat to start with, then turn down to a medium heat. Put some butter on the pan and spread it around evenly. Fry the patties so that they are dark brown and crisp on both sides.

Serving ideas

Serve hot with some no-added-sugar fruit spread of your choice. In the photo the patties are served with some blueberry fruit spread.

* Substitutions

If you’re allergic to eggs, you could make the patties with an egg substitute: place 1 tsp of Orgran’s No Egg natural egg replacer and 2 tbsp of water in a bowl and mix. Add the twaróg, 90 g of flour (you’ll need less flour if you’re using an egg substitute), Sweet Freedom and salt. Then follow the instructions above.
